For up to 15 years, this balsamic vinegar–made from Trebbiano grapes–is transferred from wood barrel to wood barrel, soaking up their distinctive and delicious mix of flavors, from cherry to juniper. The end result is a thick and syrupy combination of chocolate, raisins, leather, wood, dried fruit, figs, and toasted malt notes. We love to drizzle this on just about everything, from steaks and seafood, to nice Parmigiano-Reggiano and melon – even ice cream!
