This feta is made by Valbreso using the milk of the rare Lacaune sheep that graze on the lush plateaus surrounding Roquefort-sur-Soulzon (Roquefort country). It is a bit richer than other fetas, and it has a balanced flavor that is not too salty, but just salty enough, and not too crumbly, but just crumbly enough.
