The Giannetti Artisans Tuscany’s Natural Italian Chestnut Flour tells a wonderful story of the past. They say that the chestnut tree is also known as “the bread tree” because its “fruits” (chestnuts) have fed entire populations in the mountain areas if Italy. Emigration phenomenons and a progressive abandonment of these areas have contributed to a drastic reduction of the production of chestnuts. This is the reason why this product is so exclusive seeing that it is not a known commodity or item. Chestnut flour of Garfagnana can have a white color or a dark ivory color. It has a sweet taste and it is characterized by a light bittersweet aftertaste. Chestnuts are picked and selected, they are dried in what is called a “metato” for 40 days at a constant temperature of 86°F. Once dried chestnuts are stone ground. Texture is fine to your palate.
