Weinkäse Lagrein — otherwise translated as wine cheese — hails from the Alto-Adige region of Italy, near the Austrian border (hence the Germanic name). This is an unusual wine-washed tomme with a savory, meaty flavor akin to salami. Soaked in Lagrein wine with added herbs, garlic and pepper, the flavor is mild but with an unusual meatiness, aromatic and herby, with a distinct garlic flavor and piccante finish.
