If you have only ever had American bologna, you must treat yourself to the velvety finely ground and thinly sliced Italian Mortadella. It originated in Bologna, Italy, hence its Americanized name, but is made extensively in the Emilia-Romagna region, and its has Protected Geographical Indication (PGI) under European Union law.
Flecked with small melt-in-the-mouth chunks of fat, bright green pistachios, seasoned with pepper and garlic, Mortadella is an integral ingredient in the famous New Orleans sandwich, the Muffuletta. A great hot sandwich treat, fried, with melty cheese. That's a bologna sandwich!
