These sustainably farmed blue shrimp from the South Pacific have a unique flavor profile that comes from high levels of the amino acids Glycine and Proline (main composite of honey) giving them a unique sweetness, superior to other shrimp. Their beautiful blue color is due to the purity of the New Caledonian lagoon waters and the natural food supply from the lagoon’s plankton.
