Greater Omaha Prime beef a family owned and operated company out of Nebraska. Corn fed and finished. We purchase these steaks as the shortloin and then dry age in our Cupertino Location. We are one of a handful of restaurants with a dry age facility. We produce dry age using four controls: time, temperature, humidity, and bacteria. This creates a steak with an amazing robust beefy flavor and a beautifully tender texture.Each short loin that we purchase is hand selected just for Alexander's Steakhouse.
