Ribeye Chop (20 oz)
This is a bone in ribeye that comes to us from a single course farm out of Colorado. It is ranch raised and corn finished. We are the only restaurant in California carrying the premium prime. This new grade was approved and labeled for Alexanders Steakhouse from USDA. We got tired of the large variance in prime. We called for a superior ribeye and more consistency. We then found a rancher that was willing to hand select the top 20% of prime for us.
