It is considered a Cru since it is harvested exclusively from olive groves in the territory of the village of Negi Fumei at 1640 feet above sea level.\nThe Taggiasca olives are hand-picked and cold-pressed in the months of November and December while still in the ripening phase.\nI Fumei Cru is an elegant extra virgin olive oil with a strong character, moderately fruity with notes of green leaves, artichoke and very low acidity. The spicy and bitter ending is very well-balanced.\n\nOlive Varieties: 100% Taggiasca from the Negi Fumei olive grove.\n\nPairing ideas: bread, risotto, egg pasta, seafood and meat dishes.\n\nCompany History:\nThe Vittorio Cassini is a family owned and run business in the village of Negi Fumei near Imperia, in the northwestern region of Liguria. Vittorio Cassini has ten acres of olive groves, all of the Taggiasca olive variety.\nVittorio Cassini began his olive oil production activity in 1998 by restarting the seven generation Cassini tradition of cultivating olive trees that had been abandoned following World War II.\nIn the year 2000, he built an olive oil mill that produces 3,000 – 4,000 liters of extra virgin oil per year.\nThe purpose of the company is to produce high-quality olive oil, guaranteed by the fact that it is not produced on a large scale but at an artisan level.
