Stone-ground flour from Castle Valley Mill in Doylestown, PA. This ancestor to modern wheat varieties has a bolder flavor and better nutritional profile than conventional wheat. Only the coarsest bran has been removed. The moderate gluten and good protein content make it a great all-purpose flour -- used similarly to the bolted wheat for breads and baking.
