A mild yet flavorful sheep milk cheese from the Basque country (the French Pyrénées side). Etorki is semisoft, sliceable, and creamy on the palate. Excellent with fruit and bread, on sandwiches, with both red or white wines, but it especially loves Burgundys. A cheese that pleases both the beginner and the more sophisticated palate.
