This salmon isn't smoked at all-its cured. Curing "cooks" the meat with the careful application of salt, citrus & herbs for a precise amount of time. Before refrigeration, this is how the salmon was preserved. It is absolutely delicious with lemon & dill as the predominant flavors.
The perfect way to serve this treat is with a dollop of Creme Fraiche, your favorite Caviar sitting perched on a thin toast point, or your favorite bagel - yum!
