Flor de Garum is a premium Spanish fish sauce crafted from an ancient recipe. Made with only the finest anchovies, salt and spices, this exquisite sauce adds a delicate and complex umami flavor to salad dressings, marinades, pasta dishes or other sauce preparations.

Garum was one of the most famous sauces from antiquity. We don’t know whom exactly to attribute to its invention in the Western world, to the Greeks or the Phoenicians, although it was during the Roman period that it reached its highest level of popularity. The Romans made an exquisite sauce with fatty fish, salt and spices that had a fine bouquet, amber color and intense savory aroma. Garum was made with similar ingredients as an Asian fish sauce, however the amount of salt used was much less, resulting in more of the proteins being extracted from the fermenting fish. These proteins lent a greater flavor complexity to the sauce.

Thanks to a residue analysis from garum produced in Roman Pompeii and entombed in 79 A.D. after the eruption of Vesuvius, along with the study of a recipe from the third century A.D. found in a European abbey, we were able to create a rigorously authentic and delicate garum sauce.
