Vittorio Cassini has ten acres of olive groves, all of the Taggiasca olive variety.\nVittorio Cassini began his olive oil production activity in 1998 by restarting the seven generation Cassini tradition of cultivating olive trees that had been abandoned following World War II.\nIn the year 2000, he built an olive oil mill that produces 3,000 – 4,000 liters of extra virgin oil per year.\nThe purpose of the company is to produce high-quality olive oil, guaranteed by the fact that it is not produced on a large scale but at an artisan level.
