Aged for at least 26 months, this cheese is very different in taste and texture from the younger Beemster cheeses, or any other cheese we have tasted for that matter. One of the most popular aged Goudas, Beemster X.O. is dry and hard with bits of crystallized protein that add a little crunch here and there. Intensely flavorful, the cheese tastes of butterscotch, whiskey and pecan. Try grating over pasta as an interesting alternative to Parmesan.
