Montasio P.D.O. is a semi-hard cooked cheese produced exclusively with cows’ milk from the designated area. The flesh of Montasio is characterized by the small holes, throughout the cheese, called "eye of partridge". The flesh of fresh Montasio is smooth, elastic and compact and can be white or straw-yellow colored with a light-brown rind. As the maturation period increases, the rind becomes drier and flaky.
