Greater Omaha Prime beef a family owned and operated company out of Nebraska. Corn fed and finished. We purchase these steaks as the shortloin. We are one of a handful of restaurants with a dry age facility. We produce dry age using four controls: time, temperature, humidity, and bacteria. This creates a steak with an amazing robust beefy flavor and a beautifully tender texture.Each short loin that we purchase is hand selected just for Alexander's Steakhouse.
