OLLI SALUMERIA brand guanciale is made from the tender jowl cut of the Berkshire pork and is hand-trimmed and hand-rubbed with salt and spice. It's name derived from guancia (Italian for 'cheek') Guanciale is traditionally used in dishes like pasta all'amatricana and spaghetti alla carbonara. It is a delicacy of Central Italy, particularly Umbria and Lazio. Guanciale is excellent served very thinly sliced as an antipasto.
