Mastic, also our namesake - mastiha - in Greek, is the sap drippings from a tree which grows on the north-eastern Aegean island of Chios. It's slightly herbal, piney flavor is a favorite among Greeks, especially Chians and layers nicely against sweet baked goods.
The word "masticate" to chew is derived from mastic as the hardened sap drippings, once warmed in the mouth and chewed, have a gum-like consistency that has been enjoyed since ancient times. Chios Mastiha specifically has protected designation of origin status in the EU and is considered an ancient superfood!
