(Fresh, Farmed) You'll recognize the Turbot by its brown, diamond shaped body. It's greatly prized for its firm flesh, large flake and delicate flavor. If you're a fan of Sole or Flounder, you'll enjoy Turbot.
Bake, roast or poach whole Turbot with very mild seasonings to let its delicate flavor shine through. If you fillet it, grill, broil or steam them, but never overcook them. Turbot also makes a richly flavored fish stock.
